So friends, have we been relaxing? It is good to relax you know
I think taking time off to do nothing is contagious because I’m dreading having to work tomorrow- can I spend everyday like this? Ha.
I’m proud to say I did nada study and did plenty of relaxing beginning with a dog walk with mum, Dotti and Paws. Before heading to a family Easter breakfast at PonyCat.
It was probably the only place open on Good Friday and lucky for us it was a cute little chic cafe at Newfarm. Their menu was definitely different (which I love) but we all easily found something to enjoy.
I was umming and ahhing between the muesli and natural yogurt or a savoury dish, and ended up going the savoury route.
I enjoyed and shovelled down (since we were starving by 11am!) Leek & Sweet Potato Pancakes with Ham and Eggplant sauce, on a bed of spinach and a drizzle of balsamic vinegar.
They weren’t like normal pancakes, obviously, but reminded me of savoury pancakes or fritters (even though I’ve never had the latter).
Then it was home to watch some Jersey Shore, to which I can proudly say that we’ve finished the Fifth Season!
…but now we’re left Tv Season-less, what are we to do? Any suggestions? We need something for Sunday! Ha.
I was also very good today and remembered to take some photos of eats. Since PonyCat was brunch, meaning breakfast and lunch, I didn’t have an official lunch. But being the hungry girl I am, I still needed snacks. I had a couple of rye cruskits with natural pb, grapes & almonds, as well as this delicious toast concoction…
Then dinner was impromptu and spur of the moment
curried egg on wholegrain toast. Not great but it filled me up.
Oh and we did the Easter exchange early since mum is going away and my boyfriend wanted to share his special mousse filled eggs that he loves haha.
