Did I make you wait too long? Did you dream of fudgey gooey brownies? I am evil right? But before we get to that…yes I am going to make you read more rambling nonsense before you get the recipe, I will tell you about my day thus far.
I did the bike class again this morning- it was more comfortable for by bottom this time with that darn seat, but the workout was just as challenging. Afterwards I did a body pump class- I already hate the bicep track as it is and this one was an absolute killer!
I came home to shower and had my post-workout fav snack but this time changed it up a little bit. I decided to have one side covered in pb and the other with almond butter, the usual chia seeds and banana slices all on top of the wholgrain toast. Love it! I am off to do some window shopping with mum, grab some lunch and maybe even use my birthday gift card (thanks in-laws) to get a new gym bag
And now, the moment you’ve been waiting for- My Ultimate Healthified Brownie Recipe. Actually, it’s not mine but it’s taken from the magazine Healthy Food Guide, but it is THAT good I had to share it. The bf even said he thinks it’s the best brownies I’ve made
Triple Chocolate ‘Healthified’ Brownies
Taken from Healthy Food Guide Magazine. Makes 16 squares.
- 1 cup unsweetened apple purée ( I used baby food and it was just under a cup)
- 1/3 cup cocoa powder
- 3/4 cup self-raising flour
- 1/2 teaspoon baking soda
- 1/2 cup sugar (I used castor)
- 1/2 teaspoon salt
- 1/2 cup chopped dark chocolate (I used chocolate chips)
- 1/2 cup chopped white chocolate (I used chocolate chips again)
- 1/4 cup pecans, chopped.
- Preheat a fan forced oven to 175°C. Line a 20x20cm baking tin with baking paper. Set aside.
- Place apple purée into a bowl and sift cocoa, flour and baking soda over it. Add sugar and salt, and mix until just combined. Make sure you don’t over-mix. Gently fold in chocolate chips (or chopped chocolate) and pecans.
- Pour mixture into tin, smoothing out the top. Bake for 25 minutes or so (depending on your oven), or until the centre feels set, but is still a little ‘fudgy’ when you insert a skewer.
- Cool in tin for 5–10 minutes (if you have amazing willpower) before turning out onto a wire rack.
- Cool completely before slicing into 16 squares. Pick at it as you will.
